Jebel Shams
Ethiopia Guji — jasmine, peach, honey
Muscat · small batch · since 2019
Six single origins, roasted in 12 kg batches the night before they ship. No warehouse, no stale bags — just the drum and the next morning’s cups.
The roastery
We buy small — six to twelve bags per lot — and roast to order on a 12 kg drum roaster in Al Khuwair. Every lot is cupped three times before it earns a label, and shipped within 48 hours of the roast date stamped on the bag.

How it works
Size, rhythm and grind — change any of it before dispatch.
Your batch goes in the night before your delivery date.
12–24 hours degassing, then valved bags and a roast date stamp.
Next day across Muscat, two to three days elsewhere.
Word of mouth
“The Guji arrived thirty hours off the drum and tasted like it. I’ve stopped buying supermarket bags entirely.”
“Two bags a fortnight, espresso grind, never have to think about it. That’s the whole appeal.”
“They wrote the cupping score on the bag in pencil. Small thing. I noticed.”
